Popped! Corn

Use the Electric Skillet
Place enough popcorn to cover the bottom of the pan generously. Put the lid on. Turn the skillet all the way up to 450. Stand by. You do not have to do anything until the popping almost stops. At that point, unplug the skillet. When the popping stops, pour into a pan, season and serve. Be very careful when you remove the lid because there is danger of steam burns. 
*Like spicy food?  Sprinkle on a little chili powder, olive oil, & nutritional yeast. 
 

PEPITAS - TOASTED PUMPKIN SEEDS

Ingredients:
3 cups hulled pumpkin seeds
3 tablespoons oil
1 tablespoon chili powder 
1 teaspoon ground cumin
1 teaspoon salt
Preparation:
Preheat the electric skillet to 300°. Place the pumpkin seeds in a medium-sized bowl. Add the oil, chili powder, cumin, and salt; stir well toss to coat. Transfer the pumpkin seeds to the Electric skillet and spread out in a single layer. 
Roast for 10 minutes, until the seeds are lightly browned and crunchy; Shake or stir the seeds occasionally for even cooking. Check frequently during the last minutes; do not allow the seeds to become scorched. Transfer the seeds to a medium-sized bowl to cool. Serve with Salads or eat as a snack.
